- Rinse beans, and then soak in a large pot of water overnight.
- In a skillet, heat the oil over medium heat. For 3 to 4 minutes, sauté onion, bell pepper, celery, and garlic in olive oil.
- Rinse, add the beans to a big pot with 6 cups of water. Beans and cooked veggies are combined. Bay leaves, parsley, thyme, Cajun seasoning, cayenne pepper, and sage are used as seasonings. After bringing to a boil, turn down the heat to medium-low. for 2 1/2 hours, simmer.
- Stir sausage into beans, and continue to simmer for 30 minutes.
- Meanwhile, prepare the rice. Bring water and rice to a boil in a saucepan. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.
